I recently found a great new summer recipe on one of my favorite blogs and I had to try it out. It was fresh, light and very tasty…so I thought I must share! It was really easy to throw together and makes a wonderful bbq sidedish, light dinner, or even to just have in the fridge to pick at all week. (pretty much what I’ve been doing).
This recipe is pretty customizable which is something I really love when cooking. I didn’t take anything away, even though many of the reviews left out the red onions. I love onions, so I wasn’t too worried. I did however add cherry tomatoes and toasted pine nuts which I think made it even tastier and more colorful. All and all, I think it’s a great recipe that will remain in my cookbook (or blog) for years to come!
