Summer Pasta Salad – Roasted Shrimp and Orzo

I recently found a great new summer¬†recipe on one of my favorite blogs and I had to try it out. It was fresh, light and very tasty…so I thought I must share! It was really easy to throw together and makes a wonderful bbq sidedish, light dinner, or even to just have in the fridge to pick at all week. (pretty much what I’ve been doing).

This recipe is pretty¬†customizable¬†which is something I really love when cooking. I didn’t take anything away, even though many of the reviews left out the red onions. I love onions, so I wasn’t too worried. I did however add cherry tomatoes and toasted pine nuts which I think made it even tastier and more colorful. All and all, I think it’s a great recipe that will remain in my cookbook (or blog) for years to come!
